Nevada’s tallest building, the 67-story tower, will be the first new casino resort on the Las Vegas Strip since Resort World debuted in June 2021.
According to Vital Vegas, the restaurant menu is likely to be led by Komodo and Papi Stakes, and Liv sets the standard for Fontainebleau’s night culture. All three brands are Miami Beach success stories founded by hospitality expert David Grootman, whose Groot Hospitality exports the brand to Vegas.
Komodo serves Southeast Asian food and Papi Steak’s website advertises it as a “Golden Era Hollywood Swagger with modern Miami energy.” Both Komodo and LIV nightclubs operate at the Fontainebleau Miami Beach Hotel.
Shortly before its Vegas debut, LIV is expected to announce two superstar DJ Residences. According to Vital Vegas, a small army of executive talent poached by Resort World’s Fontainebleau helped pull Tiso and Zedd from Resort World’s Zouk Group,
Vital Vegas also reports that these brands may be added by the Mexican restaurant concept of celebrity chef Gabriella Camara, the subject of the 2019 Netflix documentary and one of Time magazine’s “most influential people” of 2020.

However, the end result of a legal battle between the two Hollywood hospitality companies could thwart such a plan.
On July 18, it was reported that Daley and his company had sued Ten Five Hospitality and Dan Daley in Nevada District Court to prevent Chef Evan Funke from taking an Italian restaurant opened in 2021 to Fontainebleau.
Court documents obtained by R-J relate to Daily’s conspiracy to “steal corporate opportunities” through a “unfair” operating contract that Daley signed while serving as a relevant COO. In a separate lawsuit, the Daily and Ten Five sued the relevant and related affiliates for breach of contract and defamation
